Mâcon-villages 2009, Nicolas Maillet.
This wine comes from a small property of only 6 hectares, which is undergoing conversion to fully organic status. Hand-harvesting and fermentation by natural yeasts are followed by 10 months' maturation in tank, and a light filtration. No oak is used in its production. A lovely crisp white Burgundy, with youthful aromas of pears and spring blossom. The citrus-tinged palate is awash with ripe white fruit flavours delivered with a refreshing acidic zing. Ideal with the delicate flavours of poached or steamed white fish or chicken breast in light cream sauces.
